  • 1/2 white onion diced
  • salt; to taste
  • 12 roma tomatoes seeded and diced
  • 4 serrano peppers seeds and all chopped finely
  • 1 bunch of cilantro
  • 2 limes; zest and juice
  • black pepper; freshly ground to taste

Mix the tomato, onion, cilantro and peppers in a large bowl. Add zest from the limes and then the juice. Mix well and then let sit in the refrigerator for at least an hour. Add the salt and pepper to taste.
