Anything goes with this recipe, use what you have. Great for using leftovers. Fry cubed potatoes in oil for about l5 minutes or until crisp and golden brown. It speeds cooking time with a lid on the pan. Fry sausage and bacon in a separate pan to cut down on grease in the potatoes. Season potatoes with salt and pepper, thyme and parsley and whatever you like. Add bacon and sausage to the potatoes. Throw in some cubed ham if you have it. Crack 4 eggs in a bowl and whisk together then pour into potato and meat mixture. Throw in cheese, to your taste. Cook until eggs are scrambled and cheese is melted. Can add onions and peppers to this if you have on hand.
