  • 2 tbsp oil for frying
  • 600 gram udon noodles either ready to cook, or precooked and drained.
  • 4 tbps fresh coriander aka cilantro, fresh and chopped coarse
  • 2 lemons zest of (fine peeled skin)
  • 4 garlic cloves finely chopped or crushed
  • 1 thumb sized fresh ginger root peeled and chopped fine
  • 1/2 fresh green or red chilli finely chopped (optional)

Heat the oil in a wok or large non stick saucepan. Gently fry the ginger and garlic and optional chilli for 2-3 minutes. Add noodles and fry hard for 5-10 minutes, stirring and turning frequently until well heated through. Add lemon zest and coriander and stir fry for 2 minutes. Serve immediately.
