These make a great appetizer, or a cool and crisp side dish or salad substitute. Credit where credit is due: This was developed from BigOven.com recipe #25662. To the original recipe, I added the garlic, basil, oregano, sugar, and black pepper, and quantified the whole recipe (the original had no ingredient quantities). Hope you like this alternative version.

  • 1/2 teaspoon sugar
  • 1 tablespoon fresh oregano - chopped
  • 1 tablespoon fresh basil - chopped
  • 4 large tomatoes - sliced 3/8 - 1/2 inch (approx 4 slices per tomato)
  • 1 stalk celery - peeled, finely chopped
  • 2 ea green onions - finely chopped
  • 1 lg clove garlic (or elephant garlic) - finely chopped
  • ground black pepper - to taste
  • 6 ounces blue cheese crumbles - more or less, to taste
  • 4 ounces grated parmesan cheese - more or less, to taste
  • 1/2 cup italian dressing - more or less

Arrange tomatoes on a cookie sheet (or sheets) lined with aluminum foil. Mix celery, onions, garlic, basil, oregano, and sugar together in a small bowl. Spoon about a teaspoon of mixture on each tomato slice. Sprinkle with black pepper to taste. Add blue cheese crumbles and Parmesan cheese to top of each tomato. Sprinkle Italian dressing over top. Cover with plastic wrap; refrigerate several hours. These will stay good for several days in the refrigerator.
