1) Heat the oven to 400 degrees. 2) Unfold the pastry and cut into four squares and place on parchment lined baking sheet. Prick pastry with a fork all over. 3) Put 2 tablespoons of olive oil a skillet over medium high heat. Add the mushrooms and the shallots and season. Cook for 4-5 minutes, then add the wine and cook until evaporated (about 1 minute). 4) Add the cheese to the pasty and top with the mushrooms (leave about 1/2 inch border around the pastry) then add more cheese. 5) Bake for 20-25 minutes.
