  • 1 cup sugar
  • 2 tablespoons lemon juice
  • dash white pepper
  • 1 pound carrots (baby) scraped
  • 2 teaspoon margarine melted
  • lemon (grated rind)

Steam carrots in vegetable steamer for 10 minutes, or until crisp-tender. Drain well and transfer to serving dish. Combine lemon juice, margarine, sugar and pepper. Pour over carrots, tossing lightly to coat well. Sprinkle with lemon zest, if desired.
