  • 1/3 cup plain yogurt
  • 2 cups chicken stock
  • 3 teaspoons ground cumin
  • extra-virgin olive oil
  • 4 large garlic cloves minced
  • 1 sweet onion chopped
  • 1/2 teaspoon ancho chile powder
  • 2 1/2 pounds whole carrots
  • 2-4 tbsp sugar (more to taste)
  • 1/4-1/2 teaspoon chipotle pepper powder to taste; i prefer 1/2 teaspoon because i like it spicier
  • juice of 1/2 lime zest some first to use as a garnish
  • 2-3 teaspoons kosher salt to taste
  • 1/2 cup chopped cilantro for garnishing
