  • 1 medium carrot grated
  • 1 lb. ground chicken breast
  • 1 small vidalia onion grated
  • 2 celery stalks very thinly diced
  • 1/4 cup ranch (i use lite ranch)
  • 1 and 1/2 cups panko crumbs
  • 1 lb. turkey sausage (mild or hot your preference)
  • 1/3 upblue cheese crumbles (optional if you don’t like blue cheese, leave it out!)
  • 1/2 wing sauce mixture reserve the rest for topping
  • for the buffalo sauce: 3 tablespoons butter 1 cup your favorite wing sauce, 1 garlic clove, minced, 1/2 tablespoon chili powder, 1 teaspoon worcestershire sauce
  • for the blue cheese crema: 1/2 cup sour cream (or 1 cup blue cheese dressing, 2 tablespoons red wine vinegar, 2 tablespoons extra blue cheese crumbles (optional), dash of salt and pepper

For the Meatballs: Preheat Oven to 400 degrees. Combine all ingredients together, careful not to over mix. Form into two inch meatballs. Cover two baking dishes with tin foil for easy clean up and PAM it good! Form into two inch meatballs and place on pans. Bake for 25-30 minutes. Drizzle the rest of the hot sauce mixture on top. Plate or store and enjoy!For the Hot Sauce: Combine all ingredients into a small sauce pan, bring to a low boil, and then simmer for 10 minutes. Let cool before mixing with hands.For the Blue Cheese Crema: Mix all ingredients together. Chill and serve. Celery sticks are also great to serve with this!
