I use unsweetened applesauce and light sour cream to reduce the calorie content of this side dish. If you desire something other than plain old corn this will compliment you meal nicely.

  • 1/4 cup butter melted
  • 1 cup all purpose flour
  • 3 tablespoons sugar
  • 1 cup cornmeal
  • 1 ea egg
  • 1 cup light sour cream
  • 1 cup applesauce unsweetened
  • 14 3/4 ounce corn cream-style
  • 15 1/4 ounce corn whole kernel, drained

PREP TIME: 20 min BAKE TIME: 30 min + Standing Preheat ovent to 350? F. In a large bowl combine the cornmeal, flour, sugar and baking soda. In another small bowl whisk the egg, sour cream, butter and unsweetened applesauce. Stir in the corn. Then stir in the dry ingredients just until moistened. Transfer mixture to a 13x9x2-in baking dish coated with non-stick cooking spray. Bake in preheated 350? F. oven for 30-35 minues or until a toothpick inserted near the center comes out clean. Serve warm and cover and refrigerate any leftovers.
