  • 1 1/2 cup of whole wheat flour
  • 1/3 cup of canola oil
  • 1 cup of fat free plain greek yogurt
  • 3 tablespoon of lemon juice
  • 2 teaspoons of lemon zest (i used more for more flavor!)
  • 1/2 teaspoon of lemon extract (optional)
  • 1/4 cup of powdered sugar

Preheat oven to 325 degrees.Zest the lemon and then slice in half and squeeze.Whisk together flour, sugar, salt, baking powder and baking soda into a bowl.In another small bowl, stir egg, oil, yogurt, (only) 2 tablespoons of lemon juice and lemon zest. Once mixed, add dry ingredients to wet ingredients. Mix gently with a spoon until combined. You don't want to beat it to death!Scrape mixture into a greased loaf pan. It will be a little thick - brownie batter-like.Bake for 45 minutes or until the center is set and a toothpick comes out clean. Try not to die when your whole house smells like heaven.While baking, mix together the sugar and remaining lemon juice to create a glaze. When bread is done baking and has COMPLETELY cooled, drizzle glaze over top of bread. Be sure to smear up any drips with your finger and lick!Slice into 12 slices and share them with someone you love.
