I love twice baked potatoes so I thought I would put a little spin on my version

  • 10 potatoes sliced in half
  • 8 ounces mayonnaise
  • 16 ounces cream cheese whipped
  • shredded cheddar cheese
  • bacon bits optional

Set oven on 400(F) Degrees and let Potatoes bake for 45 minutes or until fork slides easily in and out of Potatoes. Let Potatoes cool for a few minutes. When Potatoes are cool, scoop inside of Potatoes out into a bowl and mix Cream Cheese, Mayonnaise and Potato together. Take each Potato skins and fill them up with the mixture. Sprinkle Cheddar Cheese and Bacon Bits (Optional) on top. Put back into oven and bake them for 15 minutes or until cheese is melted and filling is hot, Enjoy! (Caution: Filling will be HOT!)
