This recipe is only for two servings, you may double if desired, add in some garlic powder or fresh minced garlic if desired ;-) by KITTENCAL My review: �These were delicious!! The flavor was wonderful and my family wolfed these right down!! The only change I made was to add a little extra honey and onion. They were perfectly browned, didn't stick and just plain good!   • 1 tsp. honey
  • 1/4 c. olive oil
  • 1 lb. potatoes , cut into 1-inch pieces
  • 1 small onion , thinly sliced
  • 1/4 c. dijon mustard
  • 1 tbsp. chopped fresh parsley
  • salt ~~amp pepper , to taste

1. Set oven to 375 degrees. 2. Mix together mustard, honey, oil and salt and pepper; add to the potatoes and onion slices. 3. Pour the sauce over potato/onion then toss well coate. 4. Place in a greased baking pan. 5. Bake for 35-40 minutes or until potatoes are tender. 6. Sprinkle fresh parsley over potatoes.
