There are a few members of our family that are on a gluten free diet. For many years, they were unable to enjoy pne of the most important side dishes of the Holiday Season. This was my creation, and has been in the family for many years now. It is always a hit. I hope you enjoy.

  • 1 stalk celery chopped
  • 1 teaspoon cider vinegar
  • 1 teaspoon dried parsley
  • 1 teaspoon dried thyme

  • 1 medium onion chopped
  • 1 2/3 cups milk
  • 1 whole egg
  • 1 teaspoon dried sage

  • 1/4 cup butter or vegetable oil
  • 1 pk bob~quotes red mill homemade wonderful bread mix

  • 4 cups gluten free bread
  • 2 teaspoons butter or margerine
  • 1 cup gluten free chicken broth

Make the bread according to the instructions found on the package. Let the bread stand in a cool, dry place for a day or two. A half loaf will make approximately 4 cups of cubes. Cut the bread into 1/2 inch cubes. Place the cubes on a baking sheet and dry in a pre-heated 325 degree oven for 20 minutes. Remove and let stand. Melt the butter in a saute pan. Add the onion and celery and cook until soft. Add the broth and bring to a boil. Remove from heat and add the bread cubes, parsley, thyme, and sage. Combine throughly. Stuffing should be moist but not mushy.
