  • 2 tsp sugar
  • 6 tbsp extra virgin olive oil
  • 2 tsp dried yeast
  • 600 ml warm water
  • 7 cups 00 flour ( 1 kg)

Sprinkle the yeast into a medium bowl with the warm water. Place almost all of the flour on the table in the shape of a volcano. Pour the yeast mixture, along with the other ingredients, into the "crater" Knead everything together for 10-15 minutes until the dough is smooth and elastic, keeping your surface floured. Grease up a bowl with some olive oil and put the dough inside. Turn the dough around so the the top is oiled. Cover the bowl and put the dough aside for at least 4-5 hours. ( I used my warming bowl for 1 hour) Preheat the oven to 400 Punch down the dough and divide into 2 balls. Let rest 5 minutes Divide each ball into 2 and roll out and place on pizza pan. Brush with olive oil. Garnish with toppings. Bake for about 10 minutes. Makes 4 12" pizzas
