Quick and tasty way to jazz up boring rice. I make the entire batch (an extra large saucepan full) and portion it out to freeze for a quick microwave in the future.

  • 1 onion chopped
  • 1 cup celery chopped
  • 2 tablespoons fresh thyme
  • 1st bowl (extra large)
  • 4 cups carrots sliced
  • 2 cups rice (rinsed basmati/jasmine)
  • 4 cups chicken broth
  • 2/3 cup celery leaves

In an extra large saucepan, saute onions, carrots, celery until soft. Push aside. Add rice and brown for 2 minutes. Add stock, salt, celery leaves, & thyme to pan and bring to a boil. Cover and simmer for 15 minutes. Remove from heat and sit for 10 minutes.
