  • 2 medium-large rutabagas (about 1.36kg | 3lb total)
  • 1/4 cup (60ml) melted ghee (storebought or homemade)
  • 1/4 cup (60ml) pure maple syrup

Peel the rutabagas and cut them into roughly 1" chunks and spread them in a single layer onto a 18" x 26" baking sheet that's been lined with parchment paperCombine the rest of the ingredients into a msmall mixing bowl and mix vigorously with a fork or whisk until well combined.Pour that sauce over the rutabagas and toss the cubes around with a your fingers until all the pieces are evenly coated. Make sure that there is plenty of room between the pieces of rutabaga to allow air to circulate freely.Bake in the 400°F baking for 40 to 45 minutes, tossing the rutabaga every 10 minutes or so, until it's fork tender and starts to turn golden brown and caramelize.Once the rutabaga has reached the desired color and doneness, remove it from the oven and immediately hit it with a light sprinkle of salt. Let it cool for a few minutes and then serve, garnished with fresh chopped parsley and a little bit of extra ghee, if desired.
