Adapted from the Weight Watchers Simply the Best cookbook. I loved this hearty chili and I did not miss the meat one bit.

  • 2 garlic cloves minced
  • 1/4 tsp salt
  • 1 onion finely chopped
  • 1 lb lentils rinsed and drained
  • 1 can no salt added diced tomatoes 14.5 oz
  • 1 green bell pepper seeded and finely chopped
  • 1 cup low sodium vegetable broth 1/2 cup extra may be added
  • 1 can no salt added tomato paste 6 oz
  • 2 carrots finely chopped
  • 2 tb red wine vinegar
  • 2 tsp oregano
  • 2 tsp cumin
  • 1/4 tsp crushed red pepper flakes

In a large saucepan, bring the lentils along with 5 cups of water to a boil. Reduce heat and simmer, covered, for about 20 minutes until the lentils begin to soften. Add the rest of the ingredients and bring mixture to a boil once again. Reduce to a simmer and cover for another 40 minutes until lentils are tender.
