  • 2 cloves of garlic minced
  • 1 can of black beans drained and rinsed
  • 1 1/2 cup of low-sodium chicken broth
  • 2 tablespoons taco seasoning (i used simply organic)
  • 2 tablespoon of chili powder
  • 1 tablespoon of oil (i used thrive algae oil)

Heat the oil in a large pot over medium heat. Add the onions and garlic and saute until fragrant.Add the ground chicken to the pan, and cook until the chicken is browned and cooked through. Mix in the spices until the chicken is coated.Add the pumpkin puree and beans to the pan, and stir until they are all mixed together.Pour the broth into the pan, and stir until combined. Bring the chili to a boil and reduce the heat down to low to let it simmer together for ~10 minutes, stirring regularly as it thickens.
