  • bills organic hemp sourdough 1 piece, toasted (buy from coles)
  • 2 cups of mixed mushrooms i used white button, flat, oyster, shitake and dried porcini, chopped
  • parsely 2 tblsp chopped
  • chives 2 tblsp chopped
  • butter 1 tsp
  • bean guac (recipe here) or avocado a few spoonfuls
  • rocket

Cover the dried porcini mushrooms with boiled water to rehydrate, let soak. Heat a pan to medium heat and add a dash of olive oil. Add all the mushrooms to the pan and sauté until cooked, a few minutes. Add the parsley, chives and butter to the pan and mix. Load up the toast with bean guac, rocket and mushroom medley.
