This is something I decided to try and just assembled what I thought would be good ingredients. It turned out terrific.

  • 6 eggs
  • 3 tablespoons vegetable oil
  • 1 lb breakfast sausage
  • 1 package potatoes o'brian
  • 1 cup shredded mexican cheese colby and monterey jack works as well
  • 8 tortillas warmed

Brown sausage and set aside. Prepare the Potatoes O'Brian per the instructions on the package until they are almost done. Move the potatoes to one side of the pan. Crack the eggs and whisk together and until they are thoroughly mixed. Add the eggs to the pan with the potatoes. scramble the eggs in the pan, it does not hurt if the potatoes mix in somewhat but try to keep them separate until most of the eggs have congealed. Stir the eggs and potato mix together. Add the sausage back into the mix and stir. Add the cheese and stir until the cheese is completely melted. Lay out the warm Tortillas and spoon about a cup of burrito mixture on to the Tortillas and roll up. Serve with salsa if desired.
