  • 4 tablespoons butter
  • 1 teaspoon cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon freshly ground pepper
  • 1/2 teaspoon red pepper flakes
  • 1-1/2 teaspoons garlic minced
  • 1 teaspoon turmeric
  • 2 tablespoons dark sesame oil
  • 2/3 cup onion diced
  • 1 cup chicken cooked, diced
  • 1-1/2 teaspoons curry powder
  • 3 cups low sodium chicken broth
  • 1 cup coconut milk full fat
  • 1 cup tomatoes canned diced, drained
  • 2/3 cup peanut butter
  • 1 medium sweet potato diced
  • 4 cups kale (get weight!)

In a large pot, sauté onion, sweet potatoes until onion is tender, about 5 minutes. Add the Chicken, garlic, spices and sauté 1 minute more. Add broth, coconut milk, tomatoes and peanut butter and stir well. Simmer 10 minutes then add kale. Simmer until desired consistency and flavor, adjusting as needed.
