4 chicken breasts 1 package crumbled feta cheese 2 red bell peppers ½ cup chicken broth 1 teaspoon minced garlic ¼ cup olive oil 1 teaspoon balsamic vinegar 2-4 drops liquid smoke 1 teaspoon onion powder 2 teaspoons garlic powder Salt and pepper Directions: 1. In large bowl, combine olive oil, balsamic vinegar, couple drops of liquid smoke, onion powder, garlic powder, salt and pepper; set aside. 2. Pound chicken breasts until flattened to roughly ½-inch thick. 3. Place chicken in prepared marinade and let sit for at least 15 minutes. 4. Place marinated chicken on 4-inch rack and spoon desired amount of feta cheese onto each piece. 5. Fold chicken over cheese and place toothpick in each piece. 6. Cook on Power Level HI for 16 minutes. 7. In separate NuWave Oven (or once chicken is finished cooking), place peppers on 4-inch rack and cook on Power Level HI for 12 minutes. 8. Peel off skin and place peppers in blender, along with garlic, chicken broth, couple drops of liquid smoke, salt and pepper. 9. Blend peppers until sauce is formed. 10. Transfer sauce to liner pan and heat on Power Level HI for 3 minutes. 11. Transfer cooked chicken breasts to liner pan; coat with sauce and serve.
