A yummy tangy relish ideal for all kinds of grilled meats and burgers, I can?t remember how or where this recipe came from but we have been making it since we were at the Bowd Inn in Devon in the early 80?s and since then we have made and served it for everyone.

  • 1 large cucumber thinly sliced
  • 1 small red onion thinly sliced
  • 3 tablespoon lemon juice or lime juice
  • 4 tablespoon fresh mint chopped
  • 2 spring onions finely chopped

To make the relish, mix together the ingredients in a large glass bowl, cover and chill for at least 2 hours or it is best chilled overnight. Serve and Enjoy
