One of my favorite foods from my mom's kitchen. My husband calls these party potatoes, but unlike other recipes, they do not have crackers or cereal in them (which I very much dislike). They are full of creamy, cheesy greatness, with some very yummy browned goodness stuck to the edges of the pan.

  • 1 stick butter or margarine
  • 2 cans cream of chicken soup
  • 8 ounces sour cream
  • 2 pounds potatoes frozen, shredded

1. Mix all ingredients together. 2. Place in buttered 9 x 13 pan. 3. Bake at 350 degrees for 1 hour. Alternative: My mom usually leaves a small amount of the butter (about 2 tablespoons) out of the mixture, melts it, then pours it on top of the mixture in the pan before baking it. Freezer Option: The mixture can be made ahead and refrigerated the night before. It can also be frozen, thawed, and then baked. My mom will often bake half the day (or day after) she makes it, and freeze the rest for another day. To do this, you can put it in a smaller square baking dish instead of an 9 x 13.
