This adaptation of a classic recipe comes from Eben Freeman, bartender of Tailor Restaurant in New York City. Note that a Gibson is a Martini with a pickled onion instead of an olive as garnish.

Preparation In chilled cocktail shaker or pint glass, combine vermouth, gin, and ice, and stir until well chilled, about 20 seconds. Strain into chilled martini glass. Squeeze lemon peel over glass, making sure oils fall into glass, then discard peel. Serve with olives on side or thread olives onto wooden skewer, place in drink, and serve.
