One of my fave restaurants serves mint pesto with jerk chicken/shrimp skewers. I love this sauce! This is my attempt to recreate it.

  • 1 clove garlic
  • 2 tablespoons parmesan cheese grated
  • 1/4 cup basil
  • 1 cup mint leaves stems removed
  • 1/4 cup cilantro stems removed
  • 1/2 cup almonds sliced if possible
  • 1/4 cup olive oil or more if needed.

In a food processor, blend all dry ingredients until finely chopped. With the machine still running, gradually add the 1/4 cup of olive oil. At this point you will be able to determine if you need more oil. Blend until you have a smooth texture.
