This is a really easy soup recipe I got off a can of chicken, but it is really good!

  • 3 cups water
  • sour cream
  • 1 tablespoon chicken bouillon
  • 1 package taco seasoning mix (1 1/4 oz)
  • 16 ounce salsa, medium
  • 2 cans (12/5 oz) chicken breast
  • 1 can (15 ounce) black beans drained and rinsed
  • 1 can (11 ounce) corn with red and green bell peppers

In a large saucepan, combine water, bouillon, taco seasoning mix and salsa. Bring to a boil. Reduce heat and simmer for 5 minutes. Add chicken, black beans and corn. Heat about 10 minutes. Ladle into bowls, and top with crushed tortilla chips, sour cream and shredded cheese, if desired.
