My husband is a pilot and likes to try the local food on his travels. He took a liking to blackened snapper so I searched the web to try and duplicate his fine dining experience. This recipe is hubby approved!

  • 2 tsp salt
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 3 tbsp paprika
  • 2 tsp dried oregano
  • 2 tsp dried thyme
  • 2 tbsp ground black pepper
  • 1 1/3 tsp ground cayenne pepper

Blend seasonings. Add 2 or 3 tbsp. of seasoning mix to 1 cup of flour. Pat flour and seasonings mixture onto both sides of fish. Let sit a few minutes. Cook in large heavy frying pan over high heat in 2 cups of vegetable oil and 1 stick of butter. Cook until brown but do not burn. About 2 1/2 minutes each side. Remove from pan and place on brown paper bag or paper towel to remove excess oil.
