I stole this from Carla Hall and jacked it up a bit. In addition to using it to top the Fried Green Tomatoes, you can serve Pimento Cheese on wheat or rye as a sandwich.

  • 6 tablespoons mayonnaise
  • 1 1/2 pounds extra-sharp cheddar cheese shredded
  • 1 (7-ounce) jar sliced pimentos with juice
  • 1/4 cup sweet pickle relish drained in colander 5 minutes
  • 1/4 cup grated sweet white onion (vidalia or walla walla sweet are the best)
