Don Triolo cooked the Barb B Que for our church festival and it was perfect. not overly smoked and the sauce was wonderful. I scaled this recipe from the original which was for 1 1/2 gallon of sauce which was for about 200 lbs. of meat. The serving size listed is in pints.

1/2 teaspoon salt
1 clove garlic minced
1 cup water
1 1/2 teaspoon worcestershire sauce
1 teaspoon chili powder
1 teaspoon freshly ground pepper
1/4 large onion chopped
3/4 tablespoon camola oil
1 1/4 tablespoon butter
1 1/4 cup catsup
2 teaspoon mustard
1 ea fresh lemon juice peel lemon and put in sauce
heat oil and butter and Saute onions and garlic until tender. Add remaining ingredients stir and bring to boil. Reduce heat to a slow simmer and cook 2-3 hours stirring so sauce does not stick.
