Mini Egg Muffins: No recipe really. I mix half a dozen eggs with a splash of water or breastmilk, then add maybe 1/2 a cup of finely chopped veg and about 1/4 cup of grated low-sodium cheese. Poor into lightly greased muffin tins (half fill) and bake at 350F for about 10 mins or until set.
