Preheat the oven to 375 degrees F and spray a pie plate with a natural cooking spray.Peel, core and dice apples.In a medium to large sauce pan over medium heat; add diced apples, water, maple syrup or sugar and cinnamon. Simmer and stir apples frequently for 8 - 10 minutes and until apples are softened.In a medium mixing bowl, combine almond flour, mashed chickpeas, maple syrup or sugar, almond milk, flax and vanilla.Pour apple mixture into pie plate.Pour the almond flour mixture over the apple mixture.Bake for 35 - 40 minutes and until the top is crisp and lightly browned.Serve with a scoop of coconut cream, ice cream or nothing at all. This crisp is so good, a topping is really not needed.
