This is my rendition of a bowl of chili I discovered in North Kansas City. Unique and SOOOO good.

  • 1 onion chopped
  • 1 tablespoon salt
  • 2 pounds ground beef
  • 1 tablespoon black pepper
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 tablespoon oregano
  • 2 tablespoons cumin ground
  • 1 can red beans rinsed and drained
  • 2 tablespoons chile powder ground
  • cider vinegar to taste

Add beef to a dutch oven along with 1/2 cup of water. Breakup beef as it heats; allow to cook for 20 minutes adding water as necessary. Add the next seven ingredients along with more water if necessary (water should never completely immerse beef). Bring to a boil and simmer on low for one hour, stirring often. Continue to add water as needed until the last 10 minutes...then allow it to boil off until there's just a little in the bottom. Add beans to a bowl, don't need to be heated. Top with plenty of seasoned beef. Top that with chopped onions and cider vinegar to taste. Serve
