  • 1 teaspoon red pepper flakes
  • sea salt and pepper to taste
  • 1-2 tablespoons olive oil
  • 1 lb. boneless skinless chicken (i used tenders)
  • 2 teaspoons goya adobo seasoning (use any southwest flavored s chipotle seasoning would also work)
  • 1 head of romaine butter lettuce or other variety that you can easily use for wraps
  • optional toppings avocado, tomatoes, onion, jalapenos, chives, cilantro and/or salsa

Heat olive oil in a large skillet over medium-high heat.Mix seasonings in a medium mixing bowl and toss raw chicken in the seasonings. Place chicken in the skillet and cook for approximately 10 minutes, turning occasionally until the chicken is cooked thoroughly.Meanwhile, prepare lettuce and toppings.I didn't shred my chicken for the pictures, but before eating I shredded the chicken up (which I would recommend). Serve the shredded chicken in lettuce wraps, and top with your favorite toppings.
