  • 1/2 teaspoon basil
  • 1/2 cup heavy cream
  • 1/2 teaspoon cumin
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon oregano
  • 2 cups celery diced
  • 8 cups water
  • 1/4 teaspoon cajun seasoning
  • 2 cups white onions diced
  • 5 cloves garlic (i cheat and use 8) chopped
  • 1 pound chicken breast (4 lg chicken breast)
  • 1 7 ounce can chopped green chiles
  • 1/2 teaspoon old bay seafood seasoning
  • 1/3 7 ounce can chipotle in adobo chopped
  • 4 tablespoons chicken base
  • 1 pickled jalapeno chopped
  • 1 20 ounce white beans soaked overnight

Cover white beans by 3 inches with water. Soak overnight. Saute onion, celery, and garlic in oil until tender. In a large stockpot add onions, celery, garlic, chicken, water, bay leaf, green chiles, oregano, cumin, dry mustard, basil, old bay seasoning, cajun seasoning, chipotle peppers, chicken base, and pickled jalapeno and simmer for 1.5 hours. Add drained beans & heavy cream and simmer for another 1-2 hours until beans are tender.
