1. Heat oil over medium-high heat and sauté onion, mushrooms, carrots, and celery until onions are turning golden. Add garlic and sauté for another minute. Add ground beef and cook until browned. Pour into a crockpot. 2. Add sweet potatoes, broth, parsley, oregano, and sea salt to the crockpot. Cover and set to low (6-8 hours). 3. About 30 minutes before eating, add the celery root, zucchini, and carrot to a small saucepan with about 1/2 cup of water. Cook over high heat until soft, about 8-10 minutes. Drain and add to a blender with all remaining ingredients except gelatin. Blend until smooth. Taste and adjust seasonings as necessary. Add gelatin, blend again, and set aside for about 10 minutes. Once it's thickened to the consistency of a yucky processed jar of cheese sauce, pour it in to the crockpot, turned off. Stir to combine. Allow to sit in the crockpot for about 5 minutes to thicken up a bit more.
