Heat 2 tbsp. oil in a deep frying pan over medium-high heat. Add thawed french fries and begin to break them into pieces using a wooden spoon. Stir to coat with oil and saute briefly. Add frozen onions and drizzle all with the remaining 2 tbsp. of cooking oil. Stir again and continue until some browning of the edges of the potatoes starts to occur. Once you see the browning, cover and reduce heat to low and allow to cook for approximately 30 minutes or long enough for the onions to be cooked through and the potatoes to be completely heated. Sprinkle with pepper to taste, stir and serve. No salt is necessary because the frozen potatoes are lightly seasoned. These are great with a variety of foods but especially with pinto beans and cornbread or similar traditional southern foods.
