  • 1/3 c brown sugar
  • 1/2 c white flour
  • 1/2 c + 1/3 c whole wheat flour
  • 3/4 tea salt
  • 1/2 tea baking soda
  • 1/4 tea baking powder
  • 5 1/3 tbs butter (room temp)
  • 1/3 c white sugar
  • 2 large eggs lightly beaten (room temp)
  • 3-4 ripe bananas mashed (i always add 4 makes the bread more moist!)

Have all ingredients at room temperature, preheat oven to 350 degrees, grease bread pan. (the original recipe called for 1 1/3 c flour, hence the weird whole wheat flour number) 1. Whisk together flour, salt, baking soda, baking powder in small bowl 2. Beat butter and sugar on high until creamy in large bowl 3. Beat in flour mixture until consistency of brown sugar 4. Gradually beat in eggs 5. Fold in bananas until just mixed 6. Scrape into greased pan and bake at 350 until toothpick comes out clean(ish), about 50-60 minutes
