  • 1 tsp kosher salt
  • 1 tsp ground cinnamon
  • 2 tsp vanilla extract

  • 4 cups nuts (i used pecans walnuts, and almonds from the baking aisle)
  • 2-3 tsp sriracha depending on desired spice level

Preheat oven to 300F, with rack on upper middle position. Line large baking sheet with parchment paper.In a small bowl, whisk together the egg white, Sriracha, and vanilla until very frothy.In a large bowl, combine the nuts with frothy egg mixture. Stir to coat evenly.In a separate bowl, whisk together brown sugar, granulated sugar, cinnamon, and salt. Add sugar mixture to the nut mixture. Stir until fully coated.Spread coated nuts on parchment-lined baking sheet, and bake for 30 minutes, quickly stirring 1-2 times in between. Let cool completely and keep in airtight container.
