A very dense oatmeal bar that tastes like a thick oatmeal raisin cookie with icing. Even dense, you keep cutting another piece!!

  • 1 tsp vanilla
  • 2 eggs
  • 1 tsp salt
  • 2 cup flour
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 3/4 cup milk
  • 1/4 cup butter softened
  • 1/2 cup applesauce ( i used unsweetened)
  • 1 tsp nutmeg
  • 1 cup raisins
  • 1/2 cup apple bits dried

1. Beat together eggs, butter and sugar 2. Add applesauce, vanilla, cinnamon & nutmeg 3. Mix flour, salt & baking powder together 4. Alternating with milk begin adding flour mixture and milk into batter 5. Add raisins and apple bits 6. Pour into greased 9 x 13 pan (Hint: I use sugar to coat not flour to avoid the white bottom and the sugar makes the bottom crunchy) 7. Bake in 350 oven for 30 minutes or until knife inserted into middle comes out clean 8. Cool in pan on wire rack 9. When completely cool: Spread with icing of: Milk, Confectioners sugar and vanilla (Mix until spreadable but not runny) Cut into squares and serve
