  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1 tablespoon canola oil
  • 3/4 cups brown sugar
  • 1/2 cup applesauce
  • 2 bananas (overipe) mashed
  • 4 ounces dates seeded and chopped
  • 1 1/2 cups self raising flour (i used 1 1/2 cups all purpose flour, plus 2 teaspoon baking power + 1/8 teaspoon salt)
  • 1/4 cup walnuts chopped (optional)

Preheat oven to 375. Mix eggs, oil, vanilla and applesauce. Add bananas and brown sugar. Mix until well combined. Combine dry ingredients (flour, baking soda, cinnamon) and stir with fork. Add dry ingredients to wet until just combined. Add in dates and mix. Spray muffin tin or use paper liners (i spray these as well) and bake for about 20 minutes
