  • 1/4 cup sugar
  • 1/2 tsp. salt
  • 1/4 cup red onion chopped
  • 1 tsp. dijon mustard
  • 2 cups chopped pitted fruit such as raspberries, strawberries, blueberries, blackberries, peaches, nectarines and plums when in season. if fresh fruit is not in season, used unsweetened frozen fruit. no need to defrost it first.
  • 1 quart distilled white vinegar
  • fruit vinaigrette:
  • 1/4 cup fruit flavored vinegar
  • 2/3 cup canola oil i use safflower

Fruit Flavored Vinegar: Put fruit in a 2 quart glass bowl and pour vinegar over the fruit. Cover tightly with plastic wrap and let stand at room temperature overnight. Strain vinegar, pour into glass bottle and label with a 6 month expiration date. I don’t recommend leaving any fruit in the vinegar longer than overnight, as it will soon deteriorate and become unappealing. Fruit Vinaigrette: In small bowl, whisk together ingredients til blended. Use at once or store in refrigerator up to 4 days. Makes about 1 1/4 cups.
