Wonderfully flavorful and fluffy oat bread! I have altered this one a bit, but I always come back to this recipe.

  • 2 eggs, lightly beaten
  • 1 tsp ground cinnamon
  • 1 tsp baking soda

Preheat oven to 350 degrees F. Cook oatmeal with water, either in microwave or on the stove top. In a medium sized mixing bowl, combine oatmeal, apples, butter, applesauce, and vanilla extract. Set aside. In a large mixing bowl combine dry ingredients. Add oatmeal mixture until just mixed. Stir in eggs. Use a loaf pan and cook for about 35-40 minutes. Use a toothpick to see when it's ready to eat.
