Here’s a quick and satisfying stew that I throw together when I’m uber lazy and tired. In other words, this is a dish I cook on a typical day in the life of Nom Nom Paleo. I don’t brown anything and all the ingredients are dumped into the slow cooker to simmer on low for 8-10 hours. Poof! Dinner is ready in less than 10 minutes of prep time!

  • 1 tbsp fish sauce
  • 1 tbsp aged balsamic vinegar
  • 2 small onions thinly sliced
  • 1/2 pound baby carrots
  • 1 small cabbage cut into 8 wedges
  • 6 cloves garlic peeled and smashed
  • 3 pounds pork shoulder or 4 bone-in cut into 1.5 inch cubes
  • 1 tbsp sunny parris seasoning or other seasoning blend
  • 1 cup marinara such as rau's
  • 1/4 cup italian parsley finely chopped

Slice onions, smash garlic Add them with carrots to slow cooker, season liberally with salt and pepper Grab high quality pork, cube it. Toss with seasoning mix and fish sauce Add another sprinkle of salt/pepper and toss to bombine (before putting in crokck pot) Add pork to top of onions/carrots Tuck cabbage wedges in on top Drizzle marinara sauce and more salt/pepper Put lid on low for 8-10 hours When pork/veggies are fork-tender, adjust seasoning with balsamic, salt, pepper. Add parsely if you like.
