Mix in a bowl, or in a pile on the counter, the flour, salt and yeast. Make a well and start adding the water incorporating the flour until a dough is formed. Knead dough until it feels elastic. Usually around 10 minutes. Flour bowl, put the dough back in it and flour the top. Cover with a damp towel and let it sit in a warm place at least an hour. The longer the better. When you go to take it out of the bowl it will have at least doubled in size, and will look spongy and full of small holes. Pat down and stretch in to shape. Bake your pizza or flatbread at 500 degrees on a hot stone for 10 to 20 minutes depending on toppings for best results.
