I have also been searching for a good waffle recipe. I am pleased with the McDougal Fruity Golden Waffles (rolled oats, water, raisins and a small amount of flour, cuisinarted). However, in my quest for a good grains cookbook I found a treasure. Aveline Kushi, the goddess of macrobiotics, teamed with another natural food person (Wendy Esko), wrote a book called "The Complete Whole Grain Cookbook". WOW! It MUST be noted that they do use OIL in some recipes, so therefore all recipes are not suited to this list. I have found that good old applesauce does the trick instead of oil,though. So! The good news is great waffles! Slightly modified . Mixed it up well, cooked them on high on my waffle iron. They are rather heavy, but crispy which I really like. I think the raisins are a good addition. Gosh, any dried fruit would be a good addition. You could even take it further and make it more of a dinner type thing with whole corn, maybe some jalepenos topped with a good salsa...sounds good to me! ;-) Posted to fatfree digest V98 #003 by "Felicia K.
