I needed to clean out the fridge one day and this happened. The sausage I mention by name are some of my favorite around, and that includes all the gourmet stuff that is available nowadays. They are made in Texas. I live in Dallas, TX and Sam's is the only place I can find them.

  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon black pepper freshly ground
  • 1-2 tablespoons olive oil
  • 8 eggs beaten
  • 20 fingerling potatoes
  • 2 fully cooked sausage links slovacek's jalapeno hot
  • 4 jalapenos fresh, coarsely chopped
  • 1/2 medium yellow onion coarsely chopped

In a medium mixing bowl, combine the potatoes with enough olive oil to coat (1-2 tablespoons usually) with the red pepper flakes, salt, and pepper. Toss to combine and coat all the potatoes. Spread the potatoes out on a baking sheet and roast at 350 degrees for about 30 minutes, or until potatoes are cooked through (a fork should go through the potatoes with little resistance). Cut them into about 1/2 inch pieces. Set aside. Cut the sausage link in half lengthwise. Cut those pieces in half so that you have 8 lengthwise quarter-links. Then cut each of these pieces cross-ways into four equal segments. In a large non-stick skillet over medium heat, combine the sausage and potatoes and cook for 10-15 minutes, stirring occasionally. The idea here is to heat everything through and put some color on the potatoes and sausage. Cut the peppers and onion into pieces that are about the size of a quarter. These will shrink so you don't want them too small to begin with. Substitute bell pepper here if you can't take the heat. Add these into the skillet and cook until they are cooked through but not cooked to death. Think fajita fixings or stir fry. Beat the eggs together in a cup, and pour over everything in the skillet. Stir this mixture until the eggs are done. At this point it only takes about 1-2 minutes to scramble the eggs. Remove from heat, enjoy.
