For Steak, I would mix one part Stubb's Moppin Sauce, one part (any brand) Mesquite marinade and one part (any brand) Herb and Garlic Marinade. Mix in a modest amount of steak seasoning (whatever is in your cubboard, but not one that is "smoky") if you want. Three full bottles should be enough for up to 10 lbs of steak. I recommend that you get Strip steaks and that you marinade for 5-8 hours (not more). For chicken, I would mix one part Fischer & Weiss Mango Pomegranite sauce with one part Stubb's Moppin Sauce or Mesquite Marinade (or both). Sprinkle with chicken seasoning. This will do about 5-7 lbs of chicken. Marinade the chicken for at least 5 hours and can go as long as overnight. I also filet the chicken breast so that they are never more than about 1/2 thick.
