Place all ingredients, except for water, in a blender or food processor and add just enough water to just below the level of the lentils. Turn on food processor or blender and blend well. If a thinner consistency is desired, add more water, 1 Tbs. at a time. Scoop into a container and drizzle a bit of olive oil on top. Enjoy immediately or store in an air-tight container in the fridge!
