This is my simple chicken marinade base that can be adjusted however your tastes desire. I added some splashes of liquid smoke and Sazon all-purpose seasoning to this base recipe last night. It was enough to season 6-8 chicken legs that I cooked on a gas grill. They came out so good that I had to post this before I forgot the recipe.

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon kosher salt
  • 1 teaspoon oregano
  • 1/2 cup italian dressing
  • chicken pieces (4 - 8 depending on part)

1. Mix all ingredients in a plastic storage bag and add chicken. Alternatively, you can add the chicken to a bowl, pour over the marinade and cover with plastic wrap but I believe, with no real proof, that the bag method is better. Let's argue. 2. Work the chicken pieces around in the bag to assure they are very well coated. 3. Store in the refrigerator for 2 - 4 hours. 4. Grill the chicken over low heat for approximately 15 minutes. 5. Turn the chicken and grill for another 10-15 minutes. 6. Repeat step 5 until the chicken is done BUT NOT OVERDONE!! (around 160 degrees F in the thickest part of the meat)
